process the almonds 1 cup at a time in the vitamix or food processor until chunky.
chop all other ingredients and put in a bowl, juice the lemon over the top and add the almonds, blend.
blend all ingredients of avo-mayo in vitamix
add avocado mayo to Tu-no and blend together until it’s like tuna salad.
serve it up on any green! yummy
Ingredients:
2 cup almonds, soaked overnight
3 stalks celery, diced
3 green onions, diced

dash cayenne
1 clove garlic, mashed/diced
1 lemon, juiced
1 small handful fresh parsley, chopped
cilantro (optional),
chopped
Avocado Mayo
1 cup pine nuts
1 large avocado
1 tablespoon lemon juice
2 sprinkle
vinegar
salt to taste
6 pitted dates
1 clove garlic

I have been vegan for several years. I have been about 90 percent raw for a couple years now. I recently finished a master cleanse and really craved raw food. So I began my internet search. I came across this recipe. It is a favorite and a staple in my diet now. I add about 5 kalamata olives to the avo mayo. It really enhances the flavor of the dish. My raw friends go nuts (no pun intended) for this dish. I don't put in a lot of cayenne as some don't like it hot (oh no another one)....i sprinkle it on my individual plate and boy is it great! Thanks

I just made this and it is absolutely delish!!! My husband wandered over, also an omnivore, wondering what I was doing with a ton of almonds and my food processor, and when I told him he could put it on some crackers, he said, or just eat it like this, and spooned much into his mouth (to help it 'fit' in the container, so he said). I will be sure to make this again!!!

Halfway through his sandwich I told my carnivore BF that he wasn't actually eating tuna. He still thinks I'm lying, it was that good. I used leftover almond pulp from making almond milk instead of soaking and processing almonds separately. This will be part of my regular repertoire, thanks!

Hi MTN Flower! I love this recipe!!! I just made something like it but I added a bunch of carrot meal from juicing. I also love chopped dill pickle in it! I didn't even ass the avo mayo but I'm going to do that next time. I just added a little cashews to the mix. Thanks!
