Recipe Directions

chop up the tomato(s) and place in a colander with rather little holes over a bowl. toss the tomato(s) with salt so it is well mixed, and leave it in the colander to drain for about 15 minutes. the salt will draw some of the water from the tomato, giving the tomato a concentrated flavor. reserve the puddle of tomato water that will form in the bowl. toss the tomato with the herbs and black pepper, try it, and add in the salty tomato water to taste.

can also be used as a salsa.

I love eating tomatoes like above with balsamic vinegar... simple and yummy.

This is great. I too, enjoy seeing recipes with minimal ingredients. I've found that though I have a fantastic collection of spices from many different areas of the world, I don't feel as optimal when I consume foods made with lots of spices and seasonings than I if I had just eaten them with minimal additions [like orange juice on a salad instead of olive oil, apple cider vinegar and spices]. I still consume a few spices, being cayenne, cinnamon occassionally.. and every so often i'll use some fresh garlic or onion but I'm currently trying to shy away from onion and garlic to keep it at more of a medicinal use..
