Tom Kha (Tom Rhaw) Noodle Soup Bowl (No Young Coconuts Required!)

Tom Kha (Tom Rhaw) Noodle Bowl

It can be hard to find organic young coconuts sometimes, and frankly, I wanted something faster that I didn't have to chisel apart! This spicy Thai style soup is made from dried shredded coconut, and blended up in a jiffy! I poured it over (not raw) rice vermicelli noodles, but this could easily be put over kelp noodles or zucchini noodles.

Ingredients: 

For the Broth:
1 c. organic dried coconut
2 c. water
1 T red miso AND/OR 1 T. red curry paste
1 fresh thai chile (use all or part of this, depending on how spicy you like it)
small chunk of ginger, peeled
juice of 1-2 limes
1 t. lemongrass powder (if you have it)
1 t. red chile flakes
2 t. shoyu or liquid aminos

For noodle bowl:
Noodles (enough for 2) - kelp, spiralized zucchini or other veggies, or non-raw rice vermicelli
1-2 carrots - shredded with a peeler or spiralizer, or just cut into julienne
10 mushrooms, cleaned and sliced
1 small bunch of cilantro - chopped
1 c. chopped tomatoes

Preparation: 

To make Broth:
Add coconut and water to a high-speed blender, and BLEND until it starts to get warm
Add rest of ingredients to your coconut milk, blend again until it warms up (not too hot!)

For Noodle Bowl:
In 2 bowls, evenly divide noodles, mushrooms, carrot, cilantro.

Pour warm broth over noddle/veggie mixture, then top each bowl with 1/2 c. of diced tomatoes. ENJOY!

Ok so I cheated a little. I tried the dried coconut but it was chunky in my blender and when I tried straining it I ended up with little more than a cup of liquid. So I used a can of organic coconut milk instead. It is a lighter coconut milk at 35% and has no preservatives.

It was absolutely delicious! I LOVE Thai food and I am so glad that I have something I can make when I am craving it. It had just the right amount of spice and the flavours were well balanced.

So glad I have some broth left over for tomorrow!

This was good! I liked some scallions in mine. I also had the problem with coconut flakes, so I think I'll strain it next time. Thanks for the recipe!

I made this for my family and they all loved it. This tastes just wonderful and we will definitely make this again. I used a mild curry powder for my youngest daughters soup. :) I had very juicy limes and ended up using only 1 lime for a serving of four. For veggies I used baby bok choy, mung bean sprouts, celery, cilantro, and chopped macadamia's. Thanks for this recipe. Delish!

Hi Maryssa,
I would think making the milk first then straining would help! I found that it was pretty smooth - but then again, I used my VitaMix... do you have a high-speed blender? If not, go to the nut-milk bag approach before you add the other ingredients!

I made it again the other night and used kelp noodles - yum! Totally like using thin rice noodles, and they really soak up the coconut-ey goodness! :)

Thanks, Raw Curls. I tried that too actually. The only problem with that was I felt I was losing too much of the mass of the soup. Maybe I should try to make a coconut milk first by blending with water and straining through a nut milk bag. Then I could use that as the base of the soup, and blend everything else in. I'd love to hear more ideas also!

HydroJen, were you able to get the dried coconut fully blended? I tried this and it was all lumpy. I had friends coming over (non-raw) so I freaked and made another batch with canned (yikes) coconut milk. It was delicious, but I want to make it can-free! Any suggestions? Oh, and I used kelp noodles which was great! My first time using them and I think I'm in love ;)

This recipe is AMAZING. Very easy and it tastes "real" if you use all the spice ingredients (for veggies I just did carrot shavings, tomato, and cilantro). I'm so in love - thanks so much for posting. Def going to be making this a lot.

This is delicious! i made it for my dinner tonight while the kids ate cooked food. It was creamy and spicy and really tasty. I love the idea of using dried coconut- thanks!

This sounds really good and the picture (yum!) is making me salivate. Will definitely be trying this recipe. Oh and I LOVE the idea of using dried coconut (sorry cleaver).
