Toffee Cookies

Toffee Cookies
Servings: 
Makes around 12 cookies

A soft sticky toffee cookie. A bit like English sticky toffy pudding.

Ingredients: 

1½ cup Macadamia Nuts, Soaked for 4 hours
1 cup Soft Dates
½ cup Agave
½ cup Water, Use the water from the soaking.
1 teaspoon Vanilla Extract

Preparation: 

1. Process Macadamia Nuts in food processor until they are a slightly bitty paste. (They will work smoother when you add the other Ingredients).

2. Mix in all other ingredients in and process them till they are well mixed and you get a smooth paste.

3. Using an ice-cream scoop portion out the mix onto a non-stick sheet and place in your dehydrator.

4. Then wetting your hand so they are damp, push down on the cookies till they are the size and shape you want.

5. Dehydrate for about 12 hours, turning them when the top forms a crust.

Hi:
these sound great! Quick question though...when you state "water from the soaking"...do you mean the water that you used from soaking the macadamia nuts?! I have been told on several different occasions (and at several different raw "cooking" classes) to never, ever, ever use the water that you, well, soak the nuts in!! I was told it contains impurities and a lot of other stuff one should not ingest...(?)
They look yummy and I will use filtered water or something... thanks!

They are in the dryer now! The "dough" tasted good so I'm sure they will be wonderful. Mine where a bit runny so just scooped out a scoop and then just spread then a bit into small circles before drying. Oh and also I didn't have enough Macadamia nuts so used 1/2 cup pecans instead.
