Tastes great and so refreshing. I love thai food & this hits the spot. I of course add green chile, but that’s up to you!
3 cup cabbage, shredded
1 cup zucchini, shredded
1 cup carrot, shredded
Basil - handful, chopped
Mint- handful, chopped
cilantro - handful, chopped
chives - handful, chopped
½ cup raw peanuts
2 tablespoon lemon juice
2 tablespoon apple cider vinegar
¼ cup braggs
2 tablespoon agave nectar
¼ cup olive oil
2 clove garlic, peeled
one 1-inch piece ginger, peeled
1 teaspoon chili powder
1½ teaspoon curry powder
In a large mixing bowl combine the first 8 ingredients.
In a blender combine the remaining ingredients and blend until smooth. Pour dressing over the salad, mix well and serve.
I like this salad although it tastes like a cross between Thai and Curry to me (hence the curry powder that Matt uses). If you don't like curry food, i say leave out the curry. I personally like the mixture of Thai and Curry. Any suggestions of what i can serve this with to make a full meal??
Does this keep well (ie taste good leftover), or should this all be eaten at once? I would like recipes that I can make in large quantities and have ready during the week. This looks like a possibility, but wondered if anyone knew for sure.
sounds great... peanuts though? do use wild jugle peanuts? or
hey i love thai food and have been trying to recreate the lime chili dressing they use( but in its raw form) what chili is considered a thai chili and what mexican chili can i use as a sub in case I cant be understood at the asian market...again;)
My husband needs to try this out! This looks delicious. I will try it out tomorrow and may post a picture as well.
