Tapenade Stuffed Mushrooms

Makes 60 mushroomsThese are absolutely delicious. The stuffing is a rich tapenade – easy to make. The hardest part is waiting for them to dehydrate! This is based on a recipe in RAWVolution (I like more olives and garlic and love the chive/cilantro spice mix).
Ingredients:
60 shiitake mushrooms, stems removed
2½ cup italian olives, chopped
1 cup raw pine nuts, ground in a food
processor
½ cup chives, minced
½ cup cilantro, minced
7 clove garlic, minced
¼ cup stone-ground mustard
Preparation:
- Mix all ingredients (except mushrooms).
- Put a small spoonful of mix on the underside of each mushroom cap (should completely fill the cap).
- Dehydrate at 100°F for 12 – 18 hours (I dehydrate closer to 12 than 18).
- Cilantro and various olives make a nice garnish for this recipe.
These can be put in the dehydrator the night before you want to eat them. Just store them in a glass container for the rest of the day.

Looks absolutely delish, perfect for parties, wish they could materialise off the computer screen lol. Just a thought, how would these turn out non-dehydrated? Iguess that drying them intensifies the flavours though.

Can you make these with something other than shiitake- button for example. Or does the shittake have a more complex flavor?

lauraj: I'm not completely positive about fresh days, but I've kept mine in the refrigerator for up to 5 days with fine results. Whenever I wonder about times for raw foods, I am reminded that Matt Amsden's "raw food box delivery":http://rawvolution.com/?q=rawvolution_food_related_questions#1 mentions food being fresh for a week.

How many days do these keep fresh and should I store them in the fridge before or after I dehydrate them or keep them room temp/

I've had these at one of their parties and they're to die for. I actually had to leave the room to stop eating them.

I've made these a few times now and found that they seem best when dehydrated closer to 12 rather than 18 hours.
