Tallarin Verde con Aji - Peruvian Dish
This mimics a dish commonly served in peruvian restaurants. Its basically spaghetti in a green pesto and its usually served with a side of Aji (ahi), a delicious spicy sauce made with a special peruvian herb called Huacatay (or Black Mint), which is a little hard to find unless there is a latin market in your area. The kelp noodles don’t exactly taste like noodles so it throws it off a bit from the original taste, but it still tastes great and is a great way to get down greens in alternative to a green smoothie!
I actually don’t know the quantities, i just do it by intuition! But I will put the ingredients in order of most to least
Noodles:
Kelp Noodles are used in this photo, also can use Zucchini Noodles!
Pesto:
Basil, arugula or spinach, mint, soaked pine nuts, sprouted sunflower seeds, garlic, olive oil, sea salt, nama shoyu, water, optional herbs and spices
Aji:
lettuce (iceberg or romaine), about a cup of cashews (to substitute for mayo), green onions (3 or 4), 3 tbsps Huacatay paste, (or substitute a bunch of Cilantro), mint, lots of lime juice, garlic, jalapeno (1-3 depending on how spicy you like it), olive oil or vegetable oil

You can now buy Kelp Noodles at Whole Foods in the refrigerated section. I LOVE them. I make this creamy pad thai sauce and put fresh salsa on top with lots of jalapeno. I can't wait to try this recipe though. Something new and yummy.

I live on the east coast and have struggled to find kelp noodles. I've tried sea tangle but found them too chewy. Any suggestions where to look. Brand names that might help? Thx!

Yea thats where I got my kelp noodles, from the co op here. They have premade kelp salads where the kelp is soft like real noodles, but the packaged ones i got were kind of crunchy... i'm not sure how they do it, but on the ingredients it included lemon and cider vinegar so maybe that has something to do with it!

Omshanti...Our local co-op OB Peoples, in Ocean Beach carries the kelp noodles. They rock, and are very noodle like. Look in the refridgerator section, back right corner of the place.

Im in san diego , and am dieing for kelp noodles as i love seaweed salad....cant seem to find them in the asian markets here...where did you get yours?

That looks good! Where can I get some of those kelp noodles? I could use zuchinni or other squash, but those kelp noodles sound very enticing :)
