Ingredients
4-6 oz. Cauliflower
2-4 oz. Broccoli
4 oz. Big Handful of Spinach
1-4 oz. Cilantro
1 Medium Tomato
Juice of Half a lemon
1-3 tsp. Cumin (to taste)
1-2 tbsp. Olive Oil
Sea Salt (to taste)
Cayenne (optional)
Recipe Directions
Process Cilantro, Cauliflower, and Broccoli up very well, you want the cauliflower and broccoli in small pieces so that it is like slighter bigger than cous cous size.
Put Mix in Bowl add diced Tomato, Olive Oil, lemon, Cumin, Sea Salt, and cayenne (opt.) to taste and its best to let it "marinate" for at least 10 minutes.
Tear up Spinach with hands and toss with mix.
I have before made too much of the mixture for one salad so I was able to refrigerate it for a few days with no negative results, its good to make more than you can have and just toss with Spinach whenever.

I am 1/4 Middle Eastern - 1/8 Syrian and 1/8 Lebanese so whenever I eat Middle Eastern it agrees with me very well and it is truly what I crave. The basic foundation ingredients of Lebanese cooking or (not cooking) is Lemon, Garlic, Olive Oil, and Cumin. I love cumin a lot!, I add it to all sorts of dishes and salads because it is sooooo good.
I came up with this recipe after going to the Winter Farmer's Market and getting cold weather crops of Cauliflower, Broccoli, Cilantro and Spinach. It is quite different than traditional Tabouleh but I made it my own. I had never made Tabouleh salad nor ever had Cauliflower prior to making this recipe. But it turned out very well and was very good!
