A couple of days ago I whipped this up as a snack and my whole family loved it, so here it is! My mother came up with the name since the corn has a sweet flavor.
2 Ears of Sweet Corn- Cut & Scraped
2 tablespoon Shredded Coconut
1 teaspoon Lime Juice
¼ rounded teaspoon Sea Salt
pinch of Pepper
Combine in a Bowl and Serve.
- If you do not have fresh ears of corn, this recipe would probably take about 1 Rounded Cup of Cut Corn- Just a guess though, so it would be smart to just go by taste.
