Sweet Sunshine Avocado Soup

Servings:
Serves 2-4A very refreshing, yet filling summer treat! Really quick and simple to make, with not too many ingredients.
Ingredients:
1 apple
1 avocado
½ cucumber
1 clove garlic, (use
more if you're a big garlic fan)
2 tablespoon fresh chives
¼ teaspoon sea salt
½ cup water, (balance with some olive oil for a richer taste)
Preparation:
Throw all ingredients but the water/olive oil in a blender (or food processor). While blending, slowly add the water/oil in until a desirable consistency is reached.
Garnish with chives and mint, as desired.
This goes quite well with guacamole and salsa, either on their own as a side salad, or wrapped up in a green burrito.

Made this for partner and I for lunch. Used all above ingredients. Taste was a little bland for us, so we tried it with sunflower sesame bread. This made it more appetizing. I think next time I'll add red chili pepper. This will satisfy my taste buds, more guacamole/mexican flavor.

Excellent soup! Very subtle but the tastes are perfectly balanced. It got 2 thumbs up in our house.
