Sweet Potatoes

Sweet Potatoes

Simple holiday recipe. Thanks to Denise Thomas for the recipe.

Ingredients: 

3 sweet potatoes, cut in cubes
1½ cup sunflower seeds, soaked overnight, drained and rinsed
2 tablespoon psyllium powder, as a thickner
olive oil, for consistency
agave nectar, to taste

Preparation: 

Blend in food processor.

Kandace, what size sweet potatoes do you generally use for this recipe? Do you have an estimated weight? I'll probably just end up guesstimating based on the consistency, but I truly am excited to try this recipe.

This is basically a side dish for holidays. I bed it could be good as a pie filling too, though - maybe sweetened a bit?
