Sweet and Spicy Mushroom Corn Salad
I just made this up today and its absolutely delicious! The mushrooms and corn make up a good but different flavor and the carrots make it more crunchier. Use your favorite salad dressing on it. I have one that I really like but I do not have a recipe because I just made it up by adding things to it here and there. I will try to make it again and give you all the recipe.
3 Greens of your choice (Try Spinach and Kale)
2 Medium ears of Corn, Kernals cut off the cob
4 ounce Button Mushrooms,
Sliced
2 Carrots, Sliced
Favorite Salad Dressing of your choice, preferably, a hot one
Generous amounts of Cayenne (3-4 large Dashes) to taste
Place greens of your choice in the bottom of bowl. I prefer darker greens like Kale and/ or Collard. Spinach is really good in this mushroom salad. Slice mushrooms, carrots, and cut corn from the cob then put sliced vegetables and corn on top of greens. Sprinkle a generous amount (about 3-4 large dashes) of Cayenne pepper on top of salad. Top with your favorite salad dressing.
NOTE: I really hate salad recipes because salads are so simple and versatile. I try to change salads around as to not be bored by the same food over and over again. With that said, please feel free to alter this recipe but try to keep the mushroom, corn and spinach with the cayenne for a nice sweet and spicy flavor!

I was just thinking that this salad would have been so much better with red onions in it. But, with the mushrooms!

woooowee just made something sooooo similar to this just the other day... but red onions instead of mushrooms...... love mushrooms tho. i'll give it another go :)
