Sun-dried tomato Pesto
This is my favorite to bring to a non-raw party with fresh veggies and raw crackers. The BEST part is the left-overs can be thinned with water to make a great salad dressing or add a little to top a raw burger.
1 cup pine nuts
¾ cup sun-dried tomatoes, soaked 3 hrs.
3 tablespoon lemon
juice
½ cup olive oil
4 clove garlic
2 tablespoon fresh basil, minced
1 tablespoon fresh oregano, minced
¼ jalapeno
¼ teaspoon fresh ginger, minced
1 teaspoon sea salt
This also comes from Raw Transformation by Wendy Rudell.
Squeeze water from tomatoes and save. Place everything in the Vita-mix and blend ‘til smooth. You’ll need to add the SD tomato water a
little at a time to get this to turn over in the blender.
I only use 1 clove garlic and I sub soaked sun seeds for the pine nuts most times.

If you're a fan of savory, you will LOVE this. After bringing this to 2 parties, I had calls from 7 non-raw friends who wanted the recipe. Both times, there was nothing left. Please let me know what you think.

Thank you! This sounds delicious, and I think I have everything! I'll use dried herbs, though, because that's what I have. Thanks, too, for the tip about substituting sunflower seeds - this sounds great!
