Strawberry Pudding Parfait

Strawberry Pudding Parfait

I made this while celebrating my sisters birthday one evening. It’s absolutely delicious and I hope you enjoy it.

Ingredients: 

Pudding:
1/2 cup macadamia nuts (soaked)
4 tablespoons water
1 large banana (or two small)
1 tablespoon raw honey or agave nectar
vanilla
Other:
4 large chopped strawberries
Handful blackberries

Preparation: 

For easier blending, first blend the banana. Add the nuts, water, sweetener and vanilla and blend on high until creamy. If you find it’s not thick enough, just add more nuts. Refrigerate for at least 1/2 an hour to set.

While you’re waiting, slice the strawberries and grab a handful of blackberries. Once the pudding is set, this is how I’ve done mine – put a spoonful in each cup followed by a handful of the blackberries, add half of the strawberries, then add more pudding on top and sprinkle the top with the rest of the strawberries. Of course, this can be done any way you wish.

Hey bronwyn! Thanks for the comment. I'm from Alberta...the weather is not as cold as it should be this time of season, it's actually pretty warm. Similar to Toronto I think :)

This was awesome! I used cashews instead of macadamias (because that's what I had). Mine wasn't as pretty as the picture, but it certainly did taste good! I'll be making this often.

Blue-Eyes, that's awesome! I was going to use Brazil nuts too (have a bunch here) and I'm sure any nut would work well. I'm glad you enjoyed it as much as me!!

I did not have macadamia nuts so I used Brazil nuts and loved it. cant wait to try it with macadamia but that will have to wait awhile. I only soaked them for a couple of hours because I could not wait It looked so good I wanted it right now but longer would have been better.
