stRAWberry Ice Cream Cake
Better than Dairy Queen ice cream cake!
2 cup Walnuts, soaked
4 tablespoon Date Paste
¾ teaspoon
Cinnamon
2 cup Cashews, Soaked
½ cup Maple Syrup
½ cup Water
¼ clove Vanilla Bean,
Scraped
.125 teaspoon Cinnamon
pinch Salt
20 ounce Strawberries, Hulled
¾ cup Maple
Syrup
pinch Cinnamon
Put the Walnuts, dates, and cinnamon in a food processor and process until smooth. Press into the bottom of a 9 inch springform pan and set aside.
For the white layer, homogenize the cashews in a juicer or nut butter machine. Put the cashew butter in a food processor with the maple syrup, water, vanilla, cinnamon and salt. Process until smooth.
For the red layer, place the stawberries, maple syrup and cinnamon in a blender and blend until smooth.
Assemble the cake into 4 layers on top of the crust. Spread half the white mixture over the crust, follow with half of the strawberry mixture. Freeze for 1 hour and then repeat the layers again. Freeze solid. Remove from freezer 30 min.s before serving garnish with berries and choco sauce and cut with warm knife.

Is there a way to get around the homogenization step? For instance, if I start with roasted cashews to begin with, can I just soak those to cheat a bit. I'm not sure why its consequential since it's frozen anyway. Anyone?

I'm not for sure. I soak the cashews and then run them through my samson juicer, using the nut butter blank plate. But before I had one of those juicers I use to just run them in my blender tell smooth.......:)

I can't believe that's raw! Definitely going to give it a try! When you say put the cashews in the juicer to create a butter, do you mean just chucking them in after they have been soaked? We have a Soyabella to make nut milks and what is leftover from the cashews after making the milk, could that be used in this recipe to make the butter?

Thanks angie, that is correct about the maple syrup, and yes, I have used vanilla extract when I did not have vanilla bean, and then I use 1tsp. :) Robin :)

qdee, it looks like the amounts of maple syrup are listed with the other ingredients in each layer - the amount under the strawberries seems to go in the red layer.

rawclaire- it looks like there is liquid in the vanilla part anyway, so however much liquid you get from the extract you could subtract it from the water measurement. (just a thought)

I do think the vanilla bean could be substituted with vanilla extract, shouldn't matter that much! :)

you are right angie, date paste is just that. And yes, again, almonds and/or pecans work great too.....:) My 8yr old can't get enough, for that matter neither can my hubby. I sell the heck out of them too. :) Thanks and Enjoy! :) (it's very easy and quick to make too)

angie - date paste is simply dates that have been pureed in a food processor or blender to a paste.
I think as a substitute for walnuts, you could use a combination of almonds and pecans. They together seem to work well in place of walnuts. I'm sure your son is gonna love this recipe!
