Squash Pasta with Beet-Alfredo

Servings:
1 for pasta, the sauce makes a lot thoughthe sauce is creamy but with the beet it gets kinda chunky.
Ingredients:
½ squash, use Spiralo or mandoline to get the shape
1 cup pine nuts
½ cup
water
½ cup pistachio
2 teaspoon olive oil
parsley/cilantro/crushed red pepper/black pepper/salt/oregano
½ beet
Preparation:
Use Spiralo to get the squash into noodle-shapes. Food process or blend the other ingredients for the sauce. Can add little beet curls (with Spiralo) for decoration if bored…
