Spring Rolls

A crunchy version of an Asian favorite. These would be great with cilantro too.
Ingredients:
Daikon radish, sliced thin
Red Cabbage, shredded
Carrot, julienned
Green Onion
Basil or Mint leaf
2 tablespoon Soy Sauce
2 tablespoon Rice Wine Vinegar
1 tablespoon Agave Nectar
Preparation:
Cut the daikon to a length suitable for rolling. Slice daikon with vegetable peeler into paper-thin strips. Add strips of veggies crosswise across the daikon slices, allowing some to hang over. Roll the daikon and pin in place with a toothpick. Mix the soy sauce, vinegar, and agave together to make a dipping sauce. I think this would have been even better with some chopped hot pepper for some spice. Have fun playing around with different veggies. Cucumber and red pepper would be great.

what is a daikon? These look yummy! One of my favorite foods are veggie-spring rolls. These will be even better!
