spreadable cheese

"Cheese" on flax crackers

I adapted this from an old (80s) vegan cookbook. I have adapted it to be almost fully raw. This has a great flavor and is a good way to get more nuts in to your diet.
(cheese shown on flax crackers before dehydration)

Ingredients: 

1 c. raw soaked & dehydrated cashews
1/2 c. water
1/2 t. salt
1/2 clove of garlic
1/4 c. diced onion
1/4 c. diced red bell pepper or fresh pimentos
pinch of thyme
2 t. fresh lemon juice
2 T. Nutritional Yeast

Preparation: 

Blend everything together for a few minuets till smooth.

"Cheese" is great to use as is at this point
OR
you can dehydrate it for a few hours to thicken it up so it can be spreadable.
