Spinach and Sundried Tomato Hemp Pesto
Servings: 
Serves 2

This is my absolute favourite pesto! It is shown in the picture with zucchini noodles, but it’s also great in stuffed mushrooms or red peppers.

Ingredients: 

1 cup Spinach, Chopped
10 Sundried tomatoes, Soaked for 1 hour, then chopped
½ cup Olive Oil, or less if desired
¼ cup Hemp Seeds
1 tablespoon Basil, Chopped Fine
1 teaspoon Red Onion, Chopped Fine
1 Clove Garlic, Chopped Very Fine
½ teaspoon Salt

Preparation: 

Mix all ingredients together and if desired let sit for 30 minutes to marinate.
Then use as a stuffing for mushrooms or red peppers or a sauce for your favourite pasta.
Enjoy!

Karuna and Satchy, I hope you enjoyed it and thanks for the kind compliments!

Winona, good call cutting down on the olive oil.. it is a little too greasy with 1/2 a cup. I'm a garlic/onion fiend so that's why I tend to use a lot ;) Pine nuts would be a delicious substitute for the hemp seeds! I will have to try that.

Rawyummy, the portobello caps would be glorious, what a great idea! Hope they turned out well :)

This is very tasty- I just made a batch with more basil and stuffed it into portobello caps which I am dehydrating for a few hours- I think they will be delicious!

I made this recipe yesterday. I used 1/4 cup olive oil not 1/2, used 1/2 clove garlic not a whole clove, replaced hemp seeds with pine nuts, and replaced red onion with green onion for a more mild flavor. I served the dish over zucchini pasta. It was good! Simple, refreshing. The tomatoes were delicious - I used tomatoes that I dried at home. Very lovely dish, thank you for contributing!
