I adapted this Epicurious recipe to be raw. Very tasty!

Recipe Directions

Halve onion lengthwise and very thinly slice crosswise. Place onion slices in a bowl, cover with water and let chill for 30 minutes.

Meanwhile, whisk together apple cider vinegar, agave, mustard, slat and pepper to taste. Drizzle in olive oil, whisking until emulsified.

Drain onion and pat dry. Quarter tomatoes and toss in a large bowl with onion, sprouts, spinach and dressing.

Nice!! one question: the recipe calls for 4 cups lentils or 8? or 4 for lentils and other for for another sprout...

Ah, that doubled for some reason - just 4 cups of lentil sprouts will do. I'll fix it!
