Spicy Mexican Soup
One of my favorite mexican soup back when i was on a SAD diet was a shrimp/potato/lime mix! I was craving it today so I decided to make a raw version. Instead of the potatoes, I used a zucchini as it almost feels the same. As for the chicken broth, I replaced it with miso. Sorry for the bad quality picture, I only had my cellphone around!
1 fresh corn, cut from the cob
1 avocado, diced
1 tomato, diced
2 small limes, juiced
1 small zucchini, diced
1 tbsp. olive oil
Hot red pepper, as much as you like it spicy!
Sea salt & fresh pepper totaste
1 tsp. miso
2 tbsp. coriander, minced
Put all the ingredients but the miso in a bowl.
Keep the miso in a teaspoon that you will hold on top of your mix.
Warm some water and pour it in the bowl to fill it right on top of the teaspoon.
I don’t want the whole miso to mix with the soup as the main ingredient is the lime so this way, you make sure to just have a light miso taste.
