spicy fajita's

serves 2 for dinner and leftovers for the next day

feelin south of the boarder today?

Ingredients: 

2 green bell peppers, chopped in strips
2 red bell peppers, chopped in strips
3 cloves garlic, chopped
3/4 onion, chopped
olive oil
pinch of cayenne
5 tbs cumin
green leaf lettuce, washed

Preparation: 

Chop all veggies in strips and place in mixing bowl. Add olive oil depending on how you like it. I used just enough to wet the veggies. Add spices. I might have even put more cumin in the mix so this is a guess on how much i used and I put more cayenne because I like it hot! taste a sample before you put in dehydrator. After you mix everything place in dehydrator for 2-3 hours to warm and they soften up too. I washed the lettuce and set a side to dry for the wrap. When it’s done assemble and eat!

Hubby and I tried these, but we changed the veggies. He used to make a great sweet potato hash browns with sweet potatoes, zucchini, onions, bell peppers, tomatillos and hot peppers. We used these and it made a wonderful spicy fajitas. It was great!

I love these we have made this recipe in many different ways. I love to make them and then just throw them in a sald with a mexican tasting dressing. AND yess LOTS of CUMIN.........They even taste great the next day cold as a snack ...

yes lots of cumin. it makes it so yummy... but mix in as much as you like then taste and if you need more then add more.
