spiced walnut cream

spiced walnut cream
Servings: 
enough for 1 pie

a spiced whipped cream, perfect for ‘pumpkin’ pie:)

Ingredients: 

2 cup walnuts, soaked a few hours, rinsed and drained
1 cup fresh water
½ cup soaked dates
2 tablespoon ground chia seeds
½ teaspoon ground cinnamon
.125 teaspoon ground ginger
pinch ground cloves

Preparation: 

1.whip all ingredients in blender until thick and fluffy.i did have to stop the blender and scrape the mixture down a few times:)

2.chill about 1 hour

3.pipe as desired onto pie.

note: the pie is poemomm’s pumpkin pie (i had to use walnuts)

this is the crust , also from poemomm (again i only had walnuts, and i sweetened it slightly with a couple of dates. that is why my crust is darker)

also, i would think any nut could be used in this recipe, especially cashews or macadamia

this can be changed to any flavor whipped cream by using different spices, and it is awesome with cocoa:)...:)

hi again carrie:)...i think there are some pumpkin pie recipes that actually use pumpkin posted by ray or kandace, did you search? also i just noticed after looking at the filling recipe from poemonmm that i used, i didn't have baby carrots so i used finely shredded regular carrots(squeeze any excess liquid), i used 1/2 cup date paste, did use the coconut oil and if i remember correctly, mixed it in my blender instead of food processor. you could probably use pumpkin for it, shred and squeeze like i did with the carrots:)

Yeah, i was really tring to find a pumpkin pie that does actually use pumpkin! Frustrating. If I can't find one or if i try to make one and it doesn't taste good, i'm making this for thanksgiving :) I have 2 pumpkins on my counter and i really need to use them!!!

hi carrie:)...that parfait sounds great!sometimes i make a crumble topping from nuts or dehydrated nut milk pulp, sweetened with dates, and a little vanilla or spice.(pulse together in f.p.)good luck!

Thanks! I think i'm gonna make this into a pudding or parfait with some buckwheaties in the middle... i'm not sure yet. Trying to find something quick and easy and delicious for thanksgiving :) If i do a parfait, i'll let you know how it turns out!

hi carrie....the pie did taste like pumpkin pie!...it may have been the placebo effect..lol....i have never tasted raw pumpkin, i notice some people say they don't like the taste of it though, and quite a few pumpkin recipes actually use carrots:)

hi joannabanana:)...i have never made it with flax, but i would try putting it back in the blender and gradually add tablespoons of water while blending to try to lighten it up...let us know your results in case anyone else has this issue:)

i had to use flax seeds instead of chia seeds, and it came out like pudding. do you know how i could get it to be lighter and fluffier? i used all the other ingredients and the walnuts and dates were fresh. it's in the fridge right now, but i was thinking i should put it in the blender again. any ideas?

hi Rawaholic..i have a small coffee grinder i use to grind this amount of chia seeds...if i have a large amount , i use the blendtec on the "grind grain" setting...i would think a flour mill would be fine:)

i do enjoy sharing my creations with all you lovely people:)

Wow! This recipe looks gorgeous and DELICIOUS. I am SO making this for Thanksgiving! :-D Thanks a bunch for posting. By the way how do you grind your chia seed? Do you just put it in a normal flour mill? It won't hurt a flour mill will it?

I made this without the flax seeds and with nutmeg instead of ginger--it's awesome. It's reminiscent of pumpkin pie just on its own, and I'm sure is a great topping for pie or even a dip for apples--Thanks for the recipe!

I found chia seeds in the bulk spice section (rows of jars) at my local Henry's. You can get organic at http://www.goldminenaturalfoods.com/detail.aspx?ID=237
I think chias are so way better than flax! Can't wait to try this.

On second thought, it might be better to soak whole flax seeds overnight, then blend until fluffy. At that point, make the pie filling, using the frothy flax seed mix.

If you can't find chia seeds, ground or whole, you could use ground flax seed, brown or golden. It will serve the same purpose, which is to help the other ingredients gel, as eggs would in a SAD pie filling recipe. One company markets white chia seeds as Salba. You might try searching for retailers or online stores that carry it.

*Redbird* - I order chia seeds online from www.iherb.com. Navitas Naturals is my personal fav. If you haven't already, you may try a local health food store. I know some in my area (California) carry them.
