Snack Boat Salad
Since going peanutbutter free, I eliminated my favorite snack…apples and carrots with peanutbutter :(. So now I’m addicted to raw almond butter. Made this today because I was craving carrots with almond butter…but everyone’s always saying “eat greens!” so to fill myself up and stop the munchies I put it all in one boat ;)! (btw…this is the first thing I’ve posted here…tres simple, I know.)
2 Romaine Leaves
4 Baby Carrots, thinly sliced lengthwise
1 Apple,
sliced
1 Handfuls Spinich, torn to bite-sized pieces
1 tablespoon Crunchy Almond Butter
1 teaspoon Agave Nectar
1 teaspoon
Water
1 Strawberry, for garnish
Salad – Place Romaine Leaves together on plate to form “boat”.Fill with Spinich. Top with sliced Carrots and Apples
Dressing – Mix Almond Butter, Agave, and Water thoroughly. May need more or less water depending on the consistency you prefer.
Drizzle Dressing over Snack Boat and garnish with Strawberry(for dessert:))
