My partner and I made this sitting huddled in our little room so that our housemates wouldn't see our bounty - beautiful, easy, no clean up, and hits the spot! Perfect for a busy day, or a day to admire the simplicity of flavors. I thought a little black pepper would be nice, but then we would have had to sneak to the kitchen!
1 avocado
6 small carrots, grated
2 sticks of celery
2 tbsp lemon juice
1 cucumber
1 1/2 cup wakame seaweed, soaked 10 minutes
soak the wakame while preparing the rest. Dice the cucumber, remembering to remove the skin if yours is from Mexico (like ours was). Grate the carrots and slice the celery, and divide into two bowls. Drain the wakame and mix with lemon juice. Divide into two bowls, pouring lemon juice over the top. Divide the avocado in half and mix in. All done!
I would think because of pesticides or wax. Scrub them if you want to keep the skin on.
Just curious, why get rid of the skin if it's from Mexico??
