Shamrock cookies with Minty Green Frosting
St. Patrick’s Day is right around the corner and it will be my first St. Pattie’s day 100% raw, so I’m in the midst of re-creating my favorite dishes for the holiday. This one will definately satisfy your “green” sweet tooth!
2 cup oats, soaked overnight
1 cup almonds, soaked
1 cup almond pulp
1 cup
walnuts, soaked
1 cup dates
1 cup almond milk
2 tablespoon maca root powder
1 tablespoon mesquite pod meal
1 teaspoon
salt
Place all ingredients in to a food processor and process. Roll into a dough and flatten with rolling pin. Place in dehydrator on teflex sheets for two hours or so. Then, flip and cut out shamrock shapes.
Green Minty Frosting:
1 cup
cashews
1 cup macadamia nuts
1/2 cup coconut flakes
1/2 cup
agave
1 tablespoon vanilla
water to taste
green coloring – I used 1
tablespoon wheatgrass powder, 1/2 cup of mint and a little spinach, but you could also use spirulina or something else
Place all ingredients in food processor or blender. Add your green colorant to suit. I used Wheatgrass powder, mint, and a little spinach, but you can also use spirulina or something else.
