Savory Sushi Wraps

Savory Sushi Wraps
Servings: 
Makes 2 wraps

These are so delicious! The first time I made them I just threw in whatever I had around, but they were so good that I’ve made them several times since using the exact same ingredients. Enjoy!

Ingredients: 

2 sheets raw nori
3 ounce fresh enoki mushrooms
½ avocado, thinly sliced
1 green onion, thinly sliced
½ red pepper , thinly sliced
.33 cup alfalfa sprouts
8 strips "raw bacon" , preferably made with thin, purple asian eggplants
1 tablespoon white sesame seeds
1 tablespoon black sesame seeds
sprinkle kombu flakes
2 tablespoon lemon juice
1 tablespoon nama shoyu
pinch wasabi powder
dash vinegar of choice

Preparation: 

Lay out the nori sheets and layer the enoki mushrooms, avocado, green onion, red pepper, “raw bacon”, and alfalfa sprouts down the middle. Sprinkle the sesame seeds and kombu flakes on top. Mix together the lemon juice, nama shoyu, wasabi, and vinegar, and pour over the top. Wrap up like a burrito, and devour with glee!

Be sure to eat these over a plate, since most of the sauce leaks out as you eat them. Don’t leave out the “raw bacon” if possible, I think it adds a lot to the recipe. Also, I bet these would be even better with some cucumber added.

Hi Shawnette,

"Raw bacon" is eggplant, peeled and sliced very thinnly with a vegetable peeler. Marinate it in olive oil, ume plum vinegar, agave or maple syrup, and spices (paprika, cayenne, black pepper). Then dehydrate until dry and chewy. There is a recipe for it on Goneraw, just search "raw bacon" and you should find it. I make mine a little different each time.

Thanks, ilikenuts! I've always thought of myself as a bit of a "foodie". Uncooking is a welcome new challenge! Lately I've been going through my old cookbooks for inspiration. I've found so many good ideas that can be applied to raw food. Look forward to a "Moroccan Carrot Salad" sometime soon.
