Recyled Pulp Balls
I just started malking almond milk again and was so not going to have a freezer full of pulp that I throw out. Not again. I never did get around to making me some cinnabuns…maybe this go around..but not today! I do not and will not have a dehydrator until next year sometime. So I came up with a solution. I was still smarting from my failed fig and date bar recipe. I wanted balls, balls all rolled up snugly in shredded coconut. I wasn’t finding a recipe that suited me so here we go.
1 cup Almond Pulp, skins removed
5 Dates
5 Dried Figs
2 tablespoon Shredded Dried
Coconut
I dumped the slightly damp almond pulp in the food processor with the figs and dates and processed until it did that ball thing, you know the one when it all just comes together? That one. I was about to add some raisins when it did that. I decided not to fiddle with a good thing and balled them up then rolled them in coconut. Holy yes, great a room temp. but chilled served with strawberry almond milk is beyond description.

How do you remove the skins from the almonds. Obviously this is pre-blending right?
