Rawliscious Brownies / Chocolate Cake

This is sooooo satisfying, if you're in the mood for a delicious brownie or a dense chocolate cake for a special
occasion!
It's wonderful with or without icing, a fruit sauce, or fresh fruit.
Give it a try!
These are approximate amounts of ingredients to give a starting place, but really, I always go by taste when making anything, because fresh raw ingredients vary so much!
4 cups Pecans - (be sure to soak, rinse thoroughly & dehydrate all your nuts - your digestive system with thank you!)
16 - Large Medjool Dates - (I get mine from oasisdategardens.com )
1/2 cup to 1 cup Raw Cacao Powder - (I use Navitas Naturals brand - from Amazon.com or iherb.com )
1 tsp. Vanilla extract - (I know this is not technically a raw product, but I personally like the results better than vanilla bean or powder - I use Simply Organic from frontiercoop.com )
A dash of salt - (be sure to use a good quality low temperature dried salt, such as Royal Himalayan Crystal Salt)
Step 1: Pulse the nuts in food processor until just crumbly
Step 2: Add Cacao & Salt & pulse in until just
mixed
Step 3: Add Dates & Process until will chopped
Step 4: Add Vanilla & Process until mixture holds together
None of these steps takes very long. Be careful not to over process so the oils remain mostly in the nuts.
Step 5: Line a plate with waxed paper & turn mixture onto paper.
Press mixture into a cake shape.
Then turn over
onto serving plate.
Step 6: OPTIONAL ice cake, or top with fruit sauce or fresh fruit, if desired.
Step 7: Chill for an hour to set up texture.

This is absolutely fantastic. I only make the brownie because I wanted something quick and tasty to make. I had a small amount of pecans left, so I used mostly walnuts. This is probably the best raw dessert I have had!
