Raw Whipped Cream!

Servings:
Makes 1 cupThis is truly like real whipped cream!(except maybe a little thicker)

Ingredients:
3 tablespoon raw cashews, soaked 6 hours
1 cup Thai young coconut meat
3 tablespoon almond
milk
8 soaked dates or 2 tablespoons honey (add more for sweeter whipped cream)
few drops vanilla extract
Preparation:
Blend all ingredients until completely smooth in a vita-mix. Continue pureeing until it becomes somewhat whipped like whipped cream. Take breaks between blending because it will overheat. Refrigerate for a few hours allowing it to stiffen, put in star-tipped piping bag. Pipe all over wherever you want it in your desserts!

Hi there! I haven't been able to find young coconuts anywhere in my area. Is there anything I could use in place of it?

I made it and it was creamy & had good vanilla flavor, but it never got thick/fluffy enough to pipe out & decorate with, so I just spread it on top of the mango pie. It was thinner than icing. I thought the taste was similar to real whipped cream, so I had my mom taste it without knowing what it was supposed to be. She thought it was my Coconog! I thought that was weird, until I realized that the coconog is mostly just these same ingredients with nutmeg and salt added. FUNNY!

Has anybody made this before? How did it come out? Was it puffy like real whipped cream, or thick like icing? I'm just curious how other people faired.

I am in the process of making cheflandria's Mango Cheesecake, and I am thinking this whipped cream will be MARVELOUS on it. I love to drink young coconuts, but I don't always eat the meat - this will give me something to use it for - thank you!!!!!

I had some raw whipped cream when I went to pure food & wine on their sunday and it was TOO DIE FOR.... thanks for the recipe. I will probably make this once I get my own ice cream maker and start making my own raw ice creams :D

Smarinalee, the other cashews are not raw because they are heated before opening the shell, to dry up the toxic liquid that is between the shell and lining of the cashew. Now I am hearing that a lot of other nuts are heated (pecans are steamed to keep the halves together instead of breaking into pieces, etc.) before they are opened. THe nuts are still labeled as raw because they are not roasted.

Where can you get "truly raw" cashews ( and why aren't they raw anyway -- I keep hearing this but I do not know why they're not raw)?
