Raw Papaya-Pineapple Pie
This is my own version of a non-bake pie inspired by the non-bake pie recipe’s of The American Vegetarian Cookbook by Marilyn Diamond. The technique for this kind of pie is from the author of this book. Althought made of fruit, seeds, nuts and dried fruit, it is a light food to be eaten. It could be eaten at breakfast, lunch or dinner or as a dessert. It could be eaten along or as a dessert after a light salad. It coud be a side dish to a fruit salad too.
Crust:
You will need half of the ingredients of Nutty-Fruity Chewy Snack Balls recipe for a 6-inch spring form pie.
1 teaspoon
cinamon powder
Filling:
1 mini papaya, pealed, seeded and lenghtwise thin cut
¼ cup cup dried, unsweetened, shredded coconut
½ cup
medium pineapple, cored and peeled
1 tablespoon tablespoon raw honey or raw agave siroop
2 tablespoon tablespoons agar-agar
.33 cup cup water
Topping:
2 small fresh strawberries
1 large ripe green kiwifruit
1 teaspoon teaspoon cinamon
¼ cup shredded coconut (optional).
Crust
1. Prepare crust mixture according to the instructions of Nutty-Fruity Chewy Snack Balls recipe using half of the ingredients.
2. Line a 6-inches spring form with baking paper to avoid the crust from sticking to the bottom.
3. Press crust mixture into the 6-inche spring form. The crust will be nearly 1/4-inch thick.
4. Dust the crust mixture with 1 teaspoon of cinamon.
5. Set in the frigde for at least 30 minutes. I place it in the freezer for at least 45 minutes.
Filling:
1. Place coconut, pineapple and raw honey or agave siroop in a blender. Blend until smooth.
2. Heat agar-agar with 1/3 water in a small pan over low heat. Keep stirring mixture frequently until it becomes bubbly and gelatinous. It will take about 3 to 4 minutes.
3. Add agar-agar mixture to the pineapple mixture in the blender iimmediately. Blend for about 20 seconds.
4. Remove crust from the fridge or freezer.
5. Layer papayas pieces over the crust.
6. Pour pineapple mixture over the papaya (crust).
7. Place pie in the fridge or freezer and allow it to cool for about 15 minutes. Allow it to set.
Topping:
1. Peel kiwifruit, cut in half lengthwise, and slice. Place slices with flat side adjacent to crust in a scallop fashion.
2. Cut strawberries in half lengthwise. Place the four strawberry pieces on the center of the pie forming a cross.
3. Dust with 1 teaspoon cinamon and schredded coconut (coconut is optional).
4. Chill for at least one hour, or 30 minutes in the freezer before consumption.

Writeetnernity: The colors that you can see from the side are not the pineapple. This is the crust which includes raisings, soaked dried figs, wallnuts, almonds, pinekernels, sunflowerseeds and dried schredded cocounut.That is why it looks so colorful.
justbeautiful: Good idea! After you have blended all ingredients, you could add shunks of the papaya to the mix. This would look beautifull as well. The only think I am thinking is this. The papaya layered on the crust, between the crust and the filling, sicks the cust and the filling together. So, if do not include the papaya, which has to be very ripe in order to hold together the crust and the filling so it pie piece holds together instead of ending in two lossely layers, I think the filling will not hold together, once is set, to the crust. In another recipe from The American Vegetarian Cook Book, they use bananas as a layer, very ripe bananas which are good and very sticky. As for the measurments of the crust ingredients, you could use all of them, then use what you need for the pie crust and put the rest in the freezer, defrost later and use it for the balls or another pie crust. I would cut the recipe of the balls half and post it later. ok?

im planning on making this... do you think i could cut up the papaya peices and fold it in with the pineapple filling instead of layering them on top of the crust?
also for the crust i notice you call for only half the ingredients for Nutty-Fruity Chewy Snack Balls... well im terrible at math, so any advice? what were the measurements you used?

Thanks. It is delicious. I did it yesterday and it is already gone! The pie is lighy, meaning you won't feel stuffed or heavy after eating it. I usually cannot eat more than one sort of nuts of seeds together because it is to heavy for my stomach. If I eat them also with dried fruit, then it is heavier for me. Because the crust is very thin, the amount of nuts and seeds I get with a medium piece is small, and the fruit amount is bigger, so it is light. The filling is soft, but it is set, it does not run.
