This Rainbow Salad with Spicy Thai Dressing was my first raw food salad I experimented with and is one of my best! The vibrant Rainbow Salad has wonderful mixture of refreshing and crunchy veggies topped with a creamy Spicy Thai Dressing. So enjoy feeling energised and fit with this super salad!

this was delicious--ran out of lettuce so the yummy dressing with a bit of honey and less water went over zucchini and neat balls. Yum!

Thanks for the feedback everyone! I love this salad for the traditional spicy and salty flavors’ that original Thai cooking possesses but adding a bit of a sweet touch is a good idea too! And this dressing is very thin as I wanted it to cover every veggie in order to get the full dressing flavor on each bite. But use less water in order to get the right consistency for you. :-)

Fantastic dressing!!!!
I made the dressing for my salad tonight and let me say it is a new favorite for me. I could bathe in it! haha... i do think that there doesn't really need to be any water, if any and some honey or agave makes it perfect. Thank you very much for sharing. Think i am going to try this with some zucchini noodles tomorrow night with some sprouts.
5. I liked this dressing but
I liked this dressing but next time I make it I will use less water because it was really runny and definitely add some honey because I think it would taste much better if it was a little sweet, maybe even a few cashews.
