Quick and easy apple - olive - kale salad.

Servings:
1 serving, can be adjusted for moreA very quick but yummy and nutritious salad.
Ingredients:
2 or 3 big leaves of kale chopped
5 or 6 olives pitted
4 or 5 sun dried tomatos
half an apple or more if you like :)
Assorted sprouts to sprinkle on top
Preparation:
I used black kale for this recipe but any kind will do.
Break or chop up the kale.
Pit the olives and break them up and rub them
into the kale.
The kale will end up coated in olive bits and absorb the flavour.
Chop apple into pieces and add.
Add sun dried tomatos.
Sprinkle sprouts over
top.(I used some buckwheat spourts and assorted salad sprouts.)
Eat!

Thanks you. I am a lazy cook so I like things that I can throw together quick, but that are still yummy and nutritious too, probably like many of us. :D

I suppose you could leave the olives in with the kale, I just smushed the olives in with the kale quickly for flavour. :)

this looks super yummy to me. One question,instead of massaging the oil and salt could I marinate the kale overnight and have the same results?????
I have all of the ingredients so I would love to have this soon.
