Purple Cream Salad

The color of this beet salad is so beautiful! Magnificent Purple.
Ingredients:
Kale, salted & massaged
Raw Beets, peeled
Avocado
Garlic,
optional
Yellow Peppers, chopped
Lemon, Lime or Orange
Preparation:
Put equal parts beets & avocado in blender. Add garlic and a couple squeezes of lime, lemon or orange. Add water as needed, blend. Pour over kale and chopped peppers. Enjoy!

This sounds beyond yummy...I cannot get kale here but I substitute mustard greens for Kale. I will try this thanks!
