Pumpkin Pudding
This is a light fall pudding. Not being a huge pie fan, I adapted this pudding from a pumpkin pie recipe taught in a raw cooking class by Bruce Horowitz. Pictured with both the variation and toppings described below.
½ medium pumpkin, peeled and cut into chunks
¾ cup water
½ cup coconut
water
½ cup orange juice
.33 cup agave
½ cup walnuts
1 tablespoon coconut
oil
2 teaspoon cinamon
¼ teaspoon nutmeg
½ teaspoon allspice
1 tablespoon golden flax seeds, ground
Mix all ingredients in a blender until smooth.
Variation: Mix a crust (1 1/2 cups chopped pecans, 1/4 cups agave, 1 tablespoon coconut oil, 1/2 cups shredded coconut, pinch of salt, pinch of cayenne) and press into bottom of baking dish. Pour pudding over crust.
Can top with whipped cream (Blend of 1 cup macadamia nuts, 2/3 cups water, few drops agave, 1/2 vanilla bean, 1 teaspoon olive oil, pinch of salt) and cacao nibs.

Best pumpkin pie ever! I've never been a fan of cooked pumpkin pies and always avoided them. This recipe looked good and I am so glad I tried it. This is hands down the most delicious pumpkin recipe I've ever had! I made mine into a crumble using the crust recipe, minus cayenne and with vanilla extract added--OMG! Thank you so much for sharing this! I can't wait to share it with everyone I know!

This was the first recipe I tried using raw pumpkin, and it made me a little queasy. The flavour was great, I think I probably just can't "do" raw squash - I tried a great raw butternut squash recipe from this site, and it made me feel the same way.

Can anyone give me a rough idea of how many cups of chopped pumpkin material one would get out of 1/2 a medium pumpkin? Because I didn't think ahead I missed my chance to get a regular pumpkin, but at the local organic market there are mini sweet pumpkins available and I want to know how many I should get for an equivalent amount :) This sounds awesome and I am SO excited to make it!

Also - can coconut oil be substituted for olive oil? or would that change the whole flavor (i would think probably yes). Could i grind up coconut flesh and use instead of the "oil"?

Ohh my gosh, this was so darn good!!!! I only had a quarter of a pumpkin and my coffee grinder died so I didn't put the flax in. I used a yam with the pumpkin I had instead.
But I did have some left over raw granola I had made so I put that on top, some pecans, coconut pulp pieces, raisins and poured almond cream over the top. HEAVEN!!!! I'm not even craving or missing my Sunday SAD breakfast, it was soooooo good!

A year late...I didn't win. To be honest I was such a pusher. People were scared of my raw dish...I'm in marketing though and I went crazy with my raw marketing delights. All in all in opened the eyes of about 10 of my coworkers so I consider that a success. Referred them to a local raw restaurant! :)

oh man...I made this tonight for a pumpkin desert competition at my work tomorrow and it is SOOO good and beautiful too. I'm psyched...hopefully I can show people that raw can be delish. *fingers crossed*

This is magically delicious! I had some for breakfast this morning, without the crust or mac cream, and with cacao nibs and chopped pecans stirred in. Kept me full for hours. I've never thought of eating pumpkin raw before... this is the way to do it! :o)

I made this into a pie last night for a potluck that we hosted. It was AMAZING!! I got a ton a rave reviews from the non-rawers (everybody but my family is NOT raw...LOL!).
I did make one modification to the mac cream: I added cocunut oil to give it a little creameir texture, and adjusted the agave and vanilla after that to taste.

This is really tasty. The cacao nibs for the topping really add a lot to the flavor, as well as the nice visual flourish.
