This is my pumpkin pie replacement. I created it with the pumpkin I had leftover from the fantastic “Pumpkin Curry” recipe from this site. Everything is to taste, and I add the coconut oil to everything, so it’s not essential.
1 cup pumpkin, peeled, seeded and cubed
½ cup raw pumpkin seeds
4 dates, pitted
1 tablespoon extra virgin coconut oil, (optional)
¼ teaspoon allspice
¼ teaspoon cinnamon
¼ teaspoon nutmeg, freshly grated
1 teaspoon gingerroot, freshly grated
1½ cup water
Throw everything into a high speed blender adding as much water as necessary.
