So wonderful that even those on a SAD will love it.
Tastes just like pumpkin but has no pumpkin in it.
Perfect for Autumn and Winter holidays.
1 cup Raw Cashews, soaked for 2 hours
8 Pitted Dates, soaked for 15 minutes
1 cup Thai Coconut Meat
½ cup Thai Coconut Water
1½ cup Carrot Juice
½ cup Maple Syrup
¾ cup Coconut Butter
2 tablespoon Ground Cinnamon
1 tablespoon Ground Ginger
pinch Ground Clove
pinch Ground Nutmeg
Mix everything together in a high speed blender.
Tastes best if allowed to chill for two to four hours – if you can wait that long!
