Pina Colada Pie
A light, creamy, yummy pie. The picture looks a little like “humanimal.” =)
1 cup pineapple
1 cup soaked cashews
¼ cup soaked macadamia nuts
1 sprinkle vanilla bean or natural flavoring
½ cup coconut (dry or fresh baby meat)
1 cup brazil nuts
½ cup walnuts
6 dried apricots (halves)
½ cup sweetener of choice
6 dried apple rings
½ cup pineapple juice
garnishes of choice, pineapple, cherry, peach, more shredded coconut
2 tablespoon cinnamon
For crust- Blend walnuts, apricots, 1 tbs cinnamon, and brazil nuts in food processor til fine. Remove and mix in bowl with sweetener of your choice. Spread this in pie plate.
For filling- Blend pineapple, dried apple rings, cashews, macadamia nuts, vanilla, and coconut, with 1 tbs cinnamon and ginger in blender til smooth.
Pour into crust and freeze for an hour or two. Garnish as inspired.
