Pickled Ginger

Makes 1 Cup

This is a very fast, very easy recipe. And it keeps just about forever.

Ingredients: 

1 cup ginger, shaved with vegetable peeler
1½ cup apple cider vinegar

Preparation: 

Put ginger in the vinegar, in a jar with a tight-sealing lid. Soak for as long as you like, up to a year, in the refrigerator.

I believe this can be use after a day of soaking, but definietly the longer the better!
