Perfectly Pink Corn Salad
I am so happy corn is available again here. My life is truly a-ok.
Feel free to substitute the umeboshi as itīs not a raw food ingredient but itīs what I had and wanted to try it.
1 small beet, grated
1 ear corn, corn taken off cob
2 avocadoes, mushed
1 small handful cilantro leaves, roughly chopped
1 tablespoon umeboshi vinegar or lemon juice
add all ingredients to a bowl and stir until avocado has become fully incorporated into the mixture. serve in the avocado skins as an easy presentation piece.
