Peppermint Ice cream

Servings:
2 serivings (if you're like me;)A refreshing, minty treat!
Ingredients:
1½ cup plain unsweetened almond milk
3 dates
.33 cup agave nectar
1 tablespoon raw cashews
1 tablespoon coconut oil
1 teaspoon peppermint extract
½ teaspoon celtic sea salt
Preparation:
- Blend all the ingredients in the blender until smooth.
- Freeze until solid.
- Scoop the frozen ice cream into a food processor and blend till creamy.
It makes a soft serve ice cream, but if you want it harder, just stick it back into the freezer for a little while longer.

Yes, and it actually works well. I think using too many cashews give it an "odd" flavor. Just my opinion, though ;)

I made this into mint chip ice cream. I added 1/4 teaspoon spirulina to the recipe to give it a green color. Then I added 1/4 cup cacao nibs as "chocolate chips".

oooh raw chocolate syrup...I just ordered some raw cacao from www.livingnutritionals.com Thanks for the idea Carmentina! But does anyone know how I can make raw chocolate chips that aren't soft but very chippy?? Well, I hope you know what I mean ;-)
