Pepita Taco Meat

Pepita Taco Meat

6-8 Tacos

I got this from Tanya’s Site so all props to her. I am posting this in response to SICK of NUTS and for all of us who refuse to spend half your budget on NUTS only to gain nothing but bloated bellies and weight. My daughter and I ate these before my wife could get home. It is really tasty and worth a try.

Ingredients: 

1 cup fresh tomato, chopped
½ cup pumpkin seeds (pepitas), soaked
¼ cup yellow bell pepper diced
¼ cup sun-dried tomatoes, soaked
1 small chipotle (smoked) pepper<-- NOT RAW, soaked or 1/2t chile powder
1/4 - 1/2 C soak water from tomatoes and chipotle pepper
2 tablespoon shallot
1 tablespoon cumin
1 teaspoon coriander
1 clove garlic - , optional

Preparation: 

Perfect Taco Wraps
Makes 6-8 tacos

Pepita filling:
1C fresh tomato, chopped
1/2C pumpkin seeds (pepitas), soaked
1/4C yellow bell pepper diced
1/4C sun-dried tomatoes, soaked
1 small chipotle (smoked) pepper, soaked or 1/2t chile powder
1/4 – 1/2 C soak water from tomatoes and chipotle pepper
Small clove garlic, minced
2T shallot
1T cumin
1t coriander
Salt (we used smoked salt) and pepper to taste
Romaine lettuce leaves for “shells”

Add all ingredients except the pepitas and bell pepper to a food processor and blend into a smooth sauce, adding soak water to achieve thick, saucy consistency. Add pepitas and bell pepper and process to coarse, meaty texture.

I've made this w/ mushroom pieces instead of the bell pepper, and as expected, it made it even meatier and more filling! I've used this recipe as a base for ideas for meat, like recently, I tried walnuts, sundried tomatoes, chipotle powder, and cumin (and I forget if I threw in any mushrooms!). It was very filling and tasty!

I made this last night - instead of using seeds i used soybeans. It could use a little tweaking. when i do i'll post. overall though i think it's a good starting point

Great, great, great!!! I take it wrapped in lettuce with side salad and mexican dressing, it was hot! Fantastic!

I love nuts...but I am so glad to see a recipe without them. If I have dehydrated seed bread I can not eat nuts on it. My insides start to hurt. I rather stick to veges, seeds and fruit...thanks so much for this recipe. Oh, to tummybetter...try juicing a few days...or even a greensmoothie EVERYDAY in place of something solid. My husband has dropped 40 lbs in 3 months and I have lost 20 in about 5 months. He has a greensmoothie for breakfast and I have one 5 days a week and trade off 2 days with Nirvana Hemp Breakfast from Ani. Yummo!

when I was a teen I could eat anything as I had a stomach of steel, it seemed. 20 years later I'm not so lucky :-)

I'm printing this out for my shopping list and making the taco meat tonight along with the Russel Jame's kale salad that also calls for chipotles. yum!!!
