Bugger. I can't eat jicama either. It sounds so good though! :)

Out of curiosity, what is Irish moss? Is it actual moss?

no, it's a seaweed currently harvested off Jamaica.

ok- what about THIS variation:

1 1/2 ounces Irish moss - rinsed off and soaked (4 hours)

1/2 cup jicama juice

3/4 c agave

2 cups jicama pulp

1 t vanilla powder

pinch salt

do you think it would work?

if so, this would solve so many of my frosting problems!!

It is a seaweed and serves to thicken.

DO you know what purpose the seaweed serves in the dish? I ask because I can't eat seaweed but maybe I could find an alternative.
