Peanut Butter Squash Cookies

Servings:
Makes about two dozen litte cookiesThese are weird but oddly addicting. Please keep an open mind!
Ingredients:
1 cup spaghetti squash, shredded
4 tablespoon raw peanut butter
1 tablespoon agave
nectar
1 cup oats
1 tablespoon peanuts
1 banana
3 teaspoon nutmeg
½ cup almond milk
Preparation:
Put everything in a food proccessor until thick and smooth. Make little cookies about the size of silver dollars and dehydrate for 24 hours. You can’t even taste the squash, and they’re even better refridgerated – I can’t help but eat one every time I walk by! Please experiment – I think they might be better without the almond milk, and I guess any kind of squash would work.

squeeko, I have seen jungle peanuts online but was skeptical about ordering them simply because I didn't know anything about them. I checked out your buddies website and I have actually visited it before on a quest for truly raw nuts. It looked promising and with your recommendation, the deal is sealed, so to speak. Thanks for the tip!

Rakao, I have the biggest Whole Foods in my state right down the street (lucky me :) ) and I see young coconut being restocked there every couple of days. When I shopped at the smallest in the state our produce department got a shipment every week. I'm guessing you don't have a Whole Foods or Wild Oats near you so I'm not sure where I'd look. I get cacao nibs from a company called Navitas Naturals, and they are the best I have tried by far. I have seen NN products at most health foods stores, independent and chains, and online as well. I would suggest naturalzing.com for the cacao nibs if you can't source them locally... ;)

They taste just like peanuts but are just way more healthier. you can purchase online from him and his prices CANNOT be beat!!!!

awesome! silentadvocate - yeah i'm in the US, & i get raw peanuts and everything at a store called Sprouts. I'm not sure if it's a chain store, so I'm not sure if u'll have 1 in Michigan. I have yet to find a place here that sells cacao nibs or young coconuts. Know of any?

I'm going to try these with out the banana and with using Almond Butter/Almonds instead of the peanuts. I'll let you know how it turns out!

I love the idea and am totally open minded :), are you in the US? I'm looking for a "mainstream" or easy way to get raw peanut's in Michigan. Thanks in advance and I will be trying a modification of this recipe ASAP...
