Pad Thai

2-3This raw pad thai is my new favorite creation! Now that I have a spiralizer, I'm going to town with it : )
Ingredients:
For Noodles:
2 medium zuccinis
1 carrot
Top with any veggies you have around!
I used:
2 pieces green onion
1/2 cup portabella mushrooms
1/2 cup cauliflower
1/2 cup mung bean sprouts
For Sauce:
2 tablespoons sesame
tahini
1 tablespoon lime (or lemon, or vinegar)
2 tablespoons tamari (or soy sauce)
garlic (to taste)
ginger (to taste)
Preparation:
Use a spiralizer (or mandoline, or peeler) to create your noodles. Add in veggies of your choice then top with the sauce. It tastes even better after it sits to soak the flavors the next day. Enjoy! : )

I tried this last nite and it was awesome but ammanoel is rite, it could have used a touch of sweetner to it so next time I would add a bit of agave to the sauce. Thanks rawsayrita!

You're welcome! Yes the tahini is great because it gives the dish that peanutty flavor and richness. I love tahini in my asian inspired dishes!

this sounds awesome. i LOVE pad thai. it would be excellent with something sweet in the sauce as well (whatever sweetener you use), pad thai typically has lots of lime, and also sweetener.

10. yeah! I was about to grate
yeah! I was about to grate the carrots or shred them...but since the spiralizer was already out I tried it. they came out as short little pieces (not much like noodles), but easy and quick to prepare...so YES it works.
