Onion Dip (from Alissa Cohen Living on Live Foods)
Even Better than the real thing!! just had to share. Really great with rye bagels, or with raw veggies etc.
2 cup macadamia nuts
1 teaspoon sea salt
1 cup onions , diced
¾ cup water
In a vita mix, blender, or food processor (best results from vita mix) blend macadamia nuts, water, and salt until smooth and creamy. Start with 3/4 cup water and add more only if needed (up to 1 cup) to make mixture blend. Keep this thick as you can and make sure it’s as smooth and creamy as possible when done.
Remove from vita-Mix and add in the onions by hand. Mix gently and chill.
Note: make sure to add the onions in by hand after the blending.
