Old Fashioned Apple Butter

1 CupMy oldest son loves apple butter and I usually keep a jar of organic in the fridge. Unfortunately, the last jar went sour. I decided to throw together my best guess since I had some red delicious apples on hand that I needed to use up. I was skeptical I would be able to “sell” him on a raw version but much to my surprise, he loved it. From now on, it’s fresh and it’s raw in this house!
Ingredients:
3 Red Delicious Apples, Cored, unpeeled, chopped
2 teaspoon Lemon Juice
Agave, to
taste
1 teaspoon Cinnamon
½ teaspoon Nutmeg
½ teaspoon Clove
1 pinch
Salt
5 teaspoon Chia seed, powdered
Preparation:
Place all the ingredients in a Vita Mix, blender or FP and process until smooth. Chill and enjoy!

You could use flax seed as a sub for chia. The thing I love about this recipe is I no longer feel guilty giving it to my kids. It's nutritious and not at all unhealthy!

What should we use if we're so far from chia seeds we're still wondering if they fall into the urban legend file? LOL Awesome recipe. I love apple butter, but I've read the nutrition.
