I found this recipe in an old (non-raw) book in my house called Healing With Whole Foods. It's a raw recipe, but it doesn't call for sprouted oats. I didn't soak/sprout the oats at all and it came out nicely, but please let me know how it comes out if you choose to sprout first.

Recipe Directions

Blend all ingredients in Vitamix or food processor. I found it easiest to grind the oats to a powder first, and then add the liquid but I'm sure it would work either way. Transfer to a lidded container and leave in a warm place for 6-11 hours until it reaches the desired sourness. Yum!

Sounds very, very interesting, will definitely try this out as yogurt is one of the things I miss the most! Just two Q - first, what is rejuvelac? And, do you think oats could be substituted with something else, like rice or barley? Because where I live there are no raw oat groats available..

i made this the other day and have been eating it for breakfast blended with sweetner, fruit, vanilla extract, topped with raisins, coconut, walnuts...the yogurt on its own tastes kind of like barf and is extremely thick, like a paste; these are probably my fault as i put 9 probiotic capsules in there and left it in the dehydrator for 13 hours. this weekend im going to make a second batch using some of the old and check it after six hours to see if it is less sour. but it definitely does seem like yogurt and it is good with berries or plums, etc.

hey, so rejuvelac is the water left from sprouting wheatberries. Actually it's a little more complicated than that, so here's a recipe: http://www.therawtarian.com/community/recipe/rejuvelac

I've never made rejuvelac, but apparently it gives that sour milk taste to raw foods. It's usually used in recipes for nut and seed cheeses. I just used water and miso in this recipe and it came out fine.

You could most likely use any other grain. Just try to use one that absorbs water well. Rice, I think, would be a bit gritty. Barley or maybe buckwheat is a better choice.

Oats are not advised in the ann wigmore living foods lifestyle. They are considered to have fungus. All seeds and nuts should be soaked first and sprouted anyway. Soaking removes the enzyme inhibitors and breaks down the protein and fat into something more easily digestible. Sprouting activates the seed. Oily seeds and nuts are the only ones that don't need sprouting, but they should still be soaked - these are chia, flax, sunflower, pumpkin, almonds, hazelnuts etc.
Instead of oats, she recommends sprouted amaranth. It tastes so good and feels lighter.
