new waldorf salad
got this recipe out of Living Cuisine The Art and Spirit of Raw Foods by Renee Loux Underkoffler.. i love it.. looking for a way to not use the dill but still have that.. uh… zing? any suggestions? my husband doesnt like dill.. so im looking for a way that he might like it..
3 tablespoon raw sesame tahini
1 clove garlic
1 cup lemon juice
2 tablespoon
apple cider vinegar
1 tablespoon organic extra virgin olive oil
1 tablespoon raw honey or maple syrup, or 2 soft dates, pitted
2 teaspoon dill
1 teaspoon sun dried sea salt, or to
taste
fresh water as needed
1 apple, sliced
3 stalks celery, chopped
2 carrots, shredded
3 green onions, finely chopped to
the top
1 cup walnuts, chopped
1 cup parsley, chopped
to make the dressing:
in a blender, blend tahini, garlic, lemon juice, vinegar, olive oil, honey or maple syrup or dates, dill, and sea salt, adding water 2 tbsp at a time as necessary to
blend until smooth.
to make the salad:
cup apple into quarters and cut out core and seeds. cut into slices, chop celery in 1/4 in pieces along the stalk. toss together apple, celery, carrots, onions, raisins,
walnuts, and parsley. drizzle in dressing and toss. serve on a bed of torn lettuce..
or eat out of the bowl like i did..

I have this book and just made this without the dill (don't like it either). Gosh! This is sooo good!!!

yeah but it might be fun though.. never thought of doin that..

num! hates dill huh? i say leave it out or maybe section a lemon and peel out the indivicula juice pods to sprinkle through out ..lots of work...but maight be good!
