This is so simple I’m sure someone thought of it before me, but in case they haven’t, it’s a super quick and satisfying lunch. It was inspired by Amanda’s Money Rolls and the recent “Hot Dog” recipe posted. Just used what I had on hand.

Recipe Directions

1. Wash as many kale leaves as you feel like. Smear them with almond butter (use a wooden spoon or spatula to avoid tearing leaves) and sprinkle with salt.

2. Slice the banana into halves or quarters lengthwise, depending the size of your kale leaves, and lay the banana in the center of each leaf.

hey! I did that exact thing the other day, except with romaine leaves 'cause that's all I had. I bet it's much heartier with kale, though. YUM.
